Here is another easy recipe for dinner. I made this last night never having made a casserole in my life before and with no recipe. I made the casserole right before Iftar and threw it in the oven. By the time I was done praying Magrib it was ready to go. Fast and yummy.
2 Boneless Skinless Chicken breasts
½ Cups Chopped Mushrooms
1 Head of broccoli
3 Cups Pasta (macaroni/ Rotini or what ever you like)
2 Cans Cream of Mushroom Soup
1 Cup Mayonnaise
1 Cup Milk
Cook pasta till al Dante, according to instructions on package. Cut the chicken into bite sized pieces and sauté with the chopped mushrooms for about 5 minutes. Cut the broccoli into bite sized pieces and blanch (drop into boiling water for about 2 minutes. Drain). In a medium sized bowl mix the mushroom soup, mayonnaise and milk to make a sauce. You could add any type of seasoning here you wanted. (I recommend 1 teaspoon of curry powder.) In a large casserole dish layer the bottom of the dish with the Chicken, Mushrooms and broccoli. Pour the sauce over and grate cheese on the top. Bake for 25 minutes at 350F with the lid on. Then broil for about 2-5 minutes on high to brown the cheese. Serve hot!
