Chicken Skewers with Herb Potatoes and Sauted Rapini

This is a great summer dinner

First you want to soak your bamboo skewers for at least two hours prior to barbecuing

Two chicken Breasts cut into cubes and marinate for at least an hour
2 tbs lemon Juice
4 tbs olive oil
1tsp salt
1tsp pepper
3tsp dried oregano

Then take your potatoes and score the top cross ways, put a small pat of butter or margarine on the top of the potato and sprinkle with salt, pepper, garlic powder and Italian herb mix. Then wrap the potatoes in tinfoil.
Ready to go on the BBQ
Turn on the BBQ to Medium heat and put on the potatoes. let them cook for a 15 mins. Then turn up the heat to medium high and put on the chicken skewers cook for about 10-15 mins or until cooked through.

While the meat is resting take your rapini and saute in a hot pan with olive oil and finely chopped garlic untill leaves are wilted.
